Esqueixada de Bacallá by Marina

Our Grandma of the Day is Marina and she will be preparing Esqueixada de Bacallá, a traditional Catalan dish. 


  • 1.5 kilograms of soaking cod
  • 3 green peppers
  • 1 large red pepper
  • 1 bunch of tender chives
  • 300 grams of Aragon olives
  • 1 bag of escarole leaves
  • 2 Garlic cloves
  • A bottle of olive oil


  • Put the already desalted cod in a bowl with a little white wine, water, and garlic (leave this to marinate)
  • Create an oil sauce by frying 2 garlic cloves in oil and let cool (to cool it faster add more cold oil)
  • Beat together with some vinegar and salt and emulsify
  • Chop onion, green pepper, and red pepper separately
  • With a metal ring and in this order, place the red pepper, onion, green pepper, and cod
  • Garnish with escarole and add the oil sauce
  • Enjoy!
