Arroz Caldoso con Verduras by Marina

Our Grandma of the Day is Marina and she will be cooking Arroz Caldoso con Verduras, a traditional brothy rice with vegetables. 


  • Seasonal vegetables
  • Wheat asparagus
  • Artichokes
  • Cauliflower
  • Red peppers
  • Green peppers
  • 1 onion
  • 1 carrot


  • Chop all of the vegetables and save the asparagus tips
  • With the disposable parts of the vegetables, make a broth
  • Sauté the onion and peppers for 5 minutes
  • Add the artichokes, some of the broth, and the cauliflower
  • Add the remaining asparagus
  • Continue to fry the vegetables while the sofrito is there and the tomatoes are striped
  • Continue sautéing
  • Add the rice
  • Stir well and add the vegetable broth
  • Keep on medium heat and watch
  • Taste and add broth as needed, depending on if you prefer a more wet or dry dish
  • Sauté the asparagus tips in a frying pan
  • Serve the rice on a dish and place two asparagus tips as decoration
  • Enjoy!
